Rustic Rye Sourdough Crackers

Ingredients

Active rye sourdough starter (about 1–2 cups or whatever you have)

Dehydrated minced garlic

Salt

Black pepper

Optional: sesame seeds, everything seasoning, chili flakes, flaky salt

Instructions

  1. Preheat
    Preheat oven to 350°F. Let it fully properly preheat.

  2. Spread
    Line a baking sheet with parchment paper.
    Spread rye starter thinly across the parchment. An offset spatula works beautifully here.

  3. Season
    Sprinkle with dehydrated minced garlic, salt, and pepper.

  4. First bake
    Bake about 10 minutes. The surface will begin to set and dry.

  5. Score
    Remove from oven and score into squares with a knife or pizza cutter.

  6. Second bake
    Return to oven and bake another 20–30 minutes until almost fully crisp and dry.
    Time will depend on thickness. You’re looking for golden edges and a firm snap.

  7. Cool
    Let cool completely. They crisp further as they cool.

  8. Serve
    Break along scored lines and serve with guacamole, lemon, or cheese.
