Dill With It: Kefir Cheese Dip

This is less of a recipe and more of a thing that happens if you keep kefir in your house long enough. You’re just making up stuff as you go.
You strain your kefir, feed the grains some fresh milk like the responsible cultured person you are… and then you set the strained kefir in the fridge to drain. In a nut milk bag. Over a bowl. Covered. Very official.
And then you forget about it.
A couple days later you open the fridge and there it is: thick, tangy kefir cheese just sitting there waiting to become something great. That’s when the dill comes in. A lot of dill. An unreasonable amount. Because free will.
Add dehydrated minced garlic, salt, pepper, stir it up, and shove it back in the fridge so everything can hang out together and get even better.
It’s simple. It’s garlicky. It’s aggressively dill-forward. And it disappears fast.
What you need
Thick kefir cheese (strained from milk kefir)
A whole lot of dill
Dehydrated minced garlic
Salt
Pepper
That’s it. No measuring required. Measure with your spirit.
How it usually goes
Strain your kefir to remove the grains. Feed the grains fresh milk and set them aside to do their thing.
Pour the strained kefir into a nut milk bag over a strainer and bowl. Cover it and put it in the fridge so the whey can drain off. Leave it there for a couple days.
Not on purpose. Just… life happens.
When you remember it exists, you’ll have thick, spreadable kefir cheese. Scoop it into a bowl, add a ridiculous amount of dill, some dehydrated minced garlic, salt, and pepper. Stir.
Taste it. Add more dill because obviously. Then plop it back in the fridge so the flavors can settle in and get friendly.
