Note: this is the traditional quark. We also offer a thermophilic version that is exactly the same as this, but makes use of the thermophilic probiotics already present in the culture instead of the mesophilic ones.

Child Tester suspiciously peered into her bowl of quark for a minute as though she thought I had made some sort of untrue claims about it. The claim I made was, “here, why don’t you try one of the yogurts your teacher last year grew up eating?” so I’m not super clear on what might have been misleading, as that teacher is from Germany. 8 must be the age of cynicism. She then took a bite. Her face transformed from suspicion into delight, and there was a whole lot of, “mama! This is a custard yogurt! It’s like custard! How did you make yogurt into custard without cooking it!? Can I have some of this as chocolate pudding?” as she frantically waved TWO THUMBS UP!! at me! We’ll mark quark as one of her favorites, since even the yogurts she really loves don’t usually get quite this much enthusiasm.
